Meat mushroom, or as it is also called - bull (wolf, mother-in-law) tongue; liverwort, liverwort - truly unique. It resembles a fresh piece of liver or meat glued to an oak or oak stump. You won't find anything like it in the forest anymore. The liverwort is nutritious, contains a lot of vitamin C. However, not everyone knows how to collect and cook meat mushrooms, therefore they pass by them on a quiet hunt.
How to collect meat mushrooms
The liver fungus is not common, but if you are lucky enough to find it, it is impossible to confuse the liverwort with another fungus. In texture, it resembles a tongue; on the cut, the "piece of liver" secretes red juice. The color of the meat mushroom can range from pink and light red to orange.
Usually liverworts appear after heavy rains at the top of summer - in mid-July and continue to grow until September. It is best to collect wet young specimens that are not yet covered with abundant mucus. However, overgrown fruit bodies of 15-20 cm can also be eaten. They usually settle on old hollow oaks, oak stumps and fallen trees.
How to cook meat mushrooms
If you cook the liverwort correctly, it will delight you with its original and delicate taste. It should be remembered that due to the high content of vitamin C in the pulp, the meat mushroom is sourish, therefore it is recommended to combine it with vegetables, for example, a large amount of onions. To get rid of the acid, it is recommended to soak the bovine tongue - for a day in water with salt, changing the liquid several times.
Meat mushroom can only be eaten fresh, for blanks this is not the best option!
Cut the mushrooms soaked for 24 hours and boil in water, boiling for 20 minutes. Drain the water. Fry in vegetable oil for 15 minutes with a lot of onions - 300 g of vegetable for 0.5 kg of mushrooms. Add salt to taste.
Boil chopped mushrooms in salted water until tender. Simmer the cauliflower, carrots and cooked white beans separately until tender (300 g of vegetables in total). Mix everything with mushrooms, pour with two tablespoons of vegetable oil and salt to your taste. Serve with boiled potatoes.
Boil the meat mushrooms, boil for 15-20 minutes, and discard in a colander. For 0.5 kg of mushrooms, take a couple of large onions, cut into thick rings. Add lard cubes (200 g total). String all the ingredients on skewers, alternating onions, mushrooms, bacon and fry over hot coals. Salt and pepper before use, you can pour ketchup on the kebab.
