Read the label on the packaging. It should indicate from which tree this coal was obtained. For kebabs, birch or oak is most suitable. Do not use softwood charcoal as it contains resins and odorous oils. Softwood charcoal can have a very pleasant aroma, but it does not in any way improve the taste of grilled meat.

Step 2

Feel the pack. The packaging must be dry. If it is wet, then the coal was stored in improper conditions and may also be wet. Of course, the shish kebab will eventually be cooked on it, but using such coal is extremely unpleasant.

Step 3

Determine if lump charcoal is in the bag or charcoal powder. The powder is not suitable for making kebabs, but it is regularly found in stores. The pieces should not be too small.

Step 4

Make sure the packaging is intact. Coal is sold in paper bags. There should be no flaws on the package, let alone breaks. Unnecessary impurities may have gotten into the damaged bag during transportation or storage. This not only does not improve the quality of the kebab, but it can be hazardous to health.

Step 5

Coal is produced by various companies. Products of enterprises that do not have the appropriate licenses and certificates may come across. See if there is GOST on the package. And whether it corresponds to the real one. The following should be written on the package with coal: GOST 24260-80. If there is no GOST or it is different, you should not buy coal. It is not known what and in what way it is made in this case.
