Step 1

Heat honey in a water bath. Melt the butter and beat with sugar, add honey and ginger to the products. Sift the flour through a fine sieve. Add baking soda to it. Stir in butter.

Step 2

Transfer the dough to a floured surface and knead with your hands, adding flour as needed. If you want to bake gingerbread cookies in the form of shapes (stars, hearts, triangles, etc.), roll out the dough with a rolling pin and cut out the necessary shapes using pastry molds or a knife.

To make a pair of medium-sized gingerbread men, divide the dough into 12 equal parts, of which you need to sculpt the heads, bodies and limbs of fairy-tale characters. Connect the parts together, put on a baking sheet, greased with butter. On top of the figurine, you need to press down a little.
